Swedish Pancakes with Mango Coulis

Swedish Pancakes with Mango Coulis
It's time once again for the Royal Foodie Joust hosted by the Left Over Queen. This month's ingredients are Mango, Brown Sugar & Cardamom. We knew we wanted to do a dessert & threw a couple ideas around for crisps & ice cream. Then the other night we went to dinner at Edina Grill & I noticed they had a special of Swedish Pancakes scented with cardamom. I thought why not make a Swedish pancake filled with mango instead of the traditional lingonberry jam & the decision was made.

This was a fabulous dessert. The gingery scent & taste of the cardamom compliments the spicy taste of the mango perfectly. We made a sweetened whipped cream for the top but you could use softened vanilla ice cream or even just serve it plain.

Mango Coulis
Cutting a mango
1 ripe but not mushy mango, cut into cubes
2 T brown sugar
2 T water
juice of 1 small lemon
1/2 t cardamom

Puree all the ingredients in a blender or food processor to make a chunky sauce.
Mango Coulis

This can be made ahead of time. Store in an airtight container in the fridge. Warm to room temperature or slightly warmer before serving. (Though you could also serve it cold we thought it would be best warm on the warm pancake.)

Swedish Pancakes
Adapted from Bon Appetit Oct. 96

2 large eggs
1 c milk
2/3 c flour
3/4 t ground cardamom
1/4 t salt
1/3 c cream
3 t unsalted butter

Blend eggs & milk in a food processor until smooth. Add flour, cardamom & salt. Blend again. With machine running add in cream & butter. Blend until smooth. The batter will be very thin as it makes a thin pancake. At this point you can store the batter in the fridge in an airtight container for up to 8 hours.
Swedish Pancake
Preheat griddle or skillet over medium-high heat. Melt a little butter on the skillet. Pour 2 T of batter on griddle to make each 5-inch pancake. Cook until brown, about 1 minute on first side. Flip over & cook until brown, about 30 sec, on second side. Keep warm in a 200 F oven until all the pancakes are cooked.

Makes 12 5-inch pancakes.

To serve, top each pancake with mango coulis & roll up.

masterful use of those ingredients! i've never had swedish pancakes, but i'm sure i would quickly become smitten with them, especially if cardamom is involved. nice job!

So which one of you is having a strong sweet-tooth kick this week? ;) Actually, real question, what's the difference between a Swedish pancake and any other kind? Yours look thiner that the typical American pancake, but I'm not sure...

Neen - It does look like we ate a ton of sweets this week doesn't it. The cupcakes we made for the 3 year old nephews & I made the cake because my sister-in-law was visiting. The pancakes though were all us.

Swedish pancakes are quite thin, pretty much a crepe.
