Matt & I have a deal, if one of us cooks the other does the dishes. Friday after work he cooked but I just didn't feel like doing dishes so I offered to cook whatever he wanted for breakfast Saturday morning. His request...banana pancakes (he had originally told me he wanted banana bread over the weekend but said he decided pancakes would be quicker.) Luckily we had these beauties around from this week's smoothies just ripe for mashing. They even could have been a little softer.
Banana Pancakes
2 ripe bananas
1 1/2 C Bisquick
1 egg
1/2 C milk
1/2 tsp cinnamon
nutmeg
1/4 tsp vanilla
With a fork mash bananas leaving some lumps. Add in Bisquick and egg stir until just blended. Add in milk, cinnamon, vanilla & a pinch a nutmeg. Stir until blended there will be lumps from the banana.
Makes 12 pancakes.
Yum. I have been looking for this recipe since my boyfriend introduced me to the Jack Johnson song. Now I have a recipe I can try next time I make pancakes for him. Looks delicious!!

ReplyDeleteIt had been many years since I've made banana pancakes and had misplaced my recipe. Looking for a new one, I stumbled upon yours. Absolutely wonderful! The texture is perfect and the hints of cinnamon, nutmeg, and vanilla give this recipe a gourmet flair. I followed the recipe exactly, then topped with banana slices, a little maple syrup, and whipped cream. I definitely will not lose THIS recipe!! Thanks much! :-)

I'm sure there are lots of basic pancakes recipes online that you can use to replace the Bisquick. I would imagine you just need some flour, baking powder & salt

ReplyDeleteI was a little worried this morning when I checked my bookmarks for this page and it wasn't there. I had a serious hankerin' for these. Thankfully, it turned up with a quick google search. This time I put some pumpkin nut butter between two pancakes and added a little syrup. Divine.

1/2 cup maple syrup
1/4 cup peanut butter
WOW...I mean WOW...these are by far the best pancakes I have ever made. The bubbles form on them properly, they don't come out too thick and heavy. I added just 2 Tbsp. of Jif to ours and they have a great hint of peanut butter. I couldn't be more pleased! If you saw how many other pancakes came out based on other recipes, you'd know why I'm so ecstatic about this recipe!
ReplyDeleteI made these this morning and it tasted like heaven on earth. They were thick and fluffy with the taste of banana and cinnamon. I used Land O Lakes Cinnamon Sugar butter on top in place of syrup. Makes me wish I had more bananas. Now I know what I'll make next time I find a bag of ripe ones discounted in the grocery store! ReplyDeleteI just made these for breakfast and my threes kids and I loved them!There won't be any left for my husband to try them, the kids liked them so much! I did add a little more milk to the batter after cooking half of it though because it was so thick. I like a thinner pancake batter, but they were delicious! Thank you for an easy and delicious banana pancake recipe!

ReplyDeleteI'm really not sure as I haven't tried it. I have read a post from a vegan blogger though who subbed in coconut milk, so that might be the way to go.
ReplyDeleteJust made these and absolutely loved them! I had 3 bananas that needed to go, so I added an extra half batch to adjust for 3...only rounding up to 2 eggs and I usually use almond extract in place of vanilla (just in pancakes, really enjoy the flavor) and it worked here as well, also rounding that up to 1/2 tsp.
