This was a total success, if I do say so myself. The ice cream base has a slight bitter flavor but also a bit of a toffee flavor from the stout. The sweetness of the Heath bar is a good foil to that bitterness while the toffee in it helps bring out more of that toffee flavor. The texture of the ice cream is beautifully creamy making a good base for the crunch of the Heath Bar. This is a flavor I'll definitely make again!
Oatmeal Stout and Heath Bar Ice Cream
16 oz oatmeal stout
3 egg yolks
1/2 c sugar
1 c cream
1 c half & half
2 Heath bars, chopped
In a saucepan bring the stout to a boil. Allow to reduce to about 1 cup.
In a large bowl whisk the egg yolks & sugar together until light yellow & thick. Set aside.
Reduce the heat under the stout to low & add the cream & milk. Bring to a simmer. Slowly stir into the egg mixture. Its important to add the milk slowly & stir so you don't end up with scrambled eggs. Return to the saucepan & cook while stirring until the mixture is slightly thickened. Strain into a clean storage container. Refrigerate until completely cold.
Process according to your ice cream maker's directions. Add the chopped Heath bar pieces during the last 5 minutes of mixing. Let freeze for a few hours before serving.
Makes about 1 quart.

I knew it had to be with a tasty stout when I saw the Tweet. This is wonderful, what a creation! I love waking up to recipes like this. ;) Now I can hardly wait to get to my ice cream maker!

ReplyDeleteIt's interesting that the reduced stout gave a creamy mouthfeel to an otherwise relatively low fat ice cream. I'm concerned, though, that the more subtle flavor notes of the stout might be lost during cooking. Is the flavor still recognizably from the same brew as when sipped straight from the bottle? If not, what would you say changed?

Reiterating my tweet: this is a great photo - I can see all the frostiness , the Heath bar pieces and the color looks like rich coffee ice cream. And I have the exact same little dish! By any chance, did it originally hold a creme brulee? 8-D

ReplyDeleteBilljac - We had a little of the stout left over so did a side by side tonight. The smell is very much the same & so is the flavor. I think the ice cream is just a little less intense & bitter than the beer, it has after all be cut by cream & eggs.
That looks good! I am a of of beer, but I would like to try your recipe! :)

ReplyDeleteIt is crazy delicious. I wasn't sure what it would taste like and was super surprised that it came out tasting just like a really good coffee ice cream! I used Sam Smith Oatmeal Stout - so i'm not sure if that had coffee notes that got intensified when it got boiled down - but i love that hint of bitterness and then the sweet of the toffee. Total Winner.
