Weekly Menu and Farmers Market Finds 6/17 - 6/22/12

It is amazing how quickly the farmers market has gone from just a few spring greens and rhubarb to a huge array of summer vegetables. We are always tempted to buy everything, especially the stuff we haven't had since last summer, but we have to remember what two of us can really eat in a week. Here's what we brought home this week..
Farmers Market Finds 6/17/12
Green Beans - This week's they'll just be sides but I want to make some spicy dilly beans soon.
More Strawberries - This batch is mainly for snacking
French Breakfast Radishes - These have been so wonderful raw and cooked. Apparently next week we'll get a new variety that is also quite mild.
Tomatoes - These need a little more ripening, but for this early in the season it's amazing to get them at all.
Bacon and Regular Brats
Zucchini - First of the year. We like to grill these up.

On to Menu Planning Monday...

Green scrambled eggs with toast and cottage bacon - The eggs are green thanks to Garlic Scape Pesto.

Grilled steak with potatoes and broccoli - A hold over from last week.

Pizzeria Lola - We have friends coming in from out of town who want to see what all the buzz is about.

Chicken and Avocado Tacos - The 3 1/2 year old we have visiting loves avocado, so she is inspiring theses.

Weekly Menu and Farmers Market Finds 6/10 - 6/15/12

This week we really saw the effects of the early warm weather we've had here in the Minneapolis area. Early strawberries, tomatoes in June! We even heard we might see the first corn in three weeks.

Here's what we picked up with week...

Pork Spare Ribs - These are in the freezer to be smoked at a later date
Garlic Scapes - I'll turn most of these into pesto today to be used in lots of different recipes.
Sun Street Granola - Our warm weather breakfast lately is yogurt and granola so we've been trying lots of different local ones.
Tomatoes - So happy to have fresh, seasonal tomatoes again
Broccoli
Strawberries - The last batch was turned into ice cream and this batch will be jam
Foxy Falafel Hummus - Found out we need to get to the market early to get this before it sells out
Potatoes
Boneless Chicken Thighs - I like thigh meat better than breast meat for things like stir-fry because I think it has more flavor.
Plus we still have radishes, eggs, peas and spring onions from last week.

Weekly Menu and Farmers Market Finds 6/4 - 6/10/12

Oh man, how long has it been since I've written one of these posts?! Feels like forever. I am still splinted-up but can do more every day including a little chopping in the kitchen. That plus the beginning of farmers market season has me feeling a little more motivated. This is actually the second week at the market, but last week we really didn't get much more than some rhubarb, salad greens and chickens to restore the freezer. This week things are starting to pick up.

Here's what we got...

French Breakfast Radishes - Good fresh and cooked
Sun Street Baguette
Strawberries - These little beauties taste so much better than those giant ones from California in the stores so cheaply right now. We turned most of them into a purée to use in ice cream.
Spring Onions
Fox Falafel Hummus - Matt loves their hummus as an afternoon snack with carrots
Sweet Peas
Sun Street Red Fresno Pepper Jelly - selling sauces and condiments is new for Sun Street. This one is a great start!
Not shown are the goodies we ate at the market like Sun Streets new Cheddar, Sausage and Currant Biscuit and the last Bogart Loves donuts until August (good luck with that new baby, guys!).
Snack Dinner
A few of the items made their way into last night's "snack dinner." I love snack dinner, it's kind of like a picnic on the couch. The French Breakfast Radishes were so wonderful with some Hope Butter on the baguette. We paired the Fresno Pepper Jelly with both cream cheese and a some local camembert. I think a pepper jelly and grilled cheese sandwich might be in order later this week.

Weekly Menu 3/12 - 3/17/12 and Corned Beef

Our kitchen is busy this week preparing for a big St. Patrick's dinner this coming Saturday. My mom is a Murphy who's family came to New York during the Potato Famine, so of course I need to celebrate my Irish roots!
Making Corned Beef
Yesterday, Matt began the process of making corned beef from scratch. He is using the recipe from Charcuterie by Michael Ruhlman and Bryan Polcyn. For our 3 1/2 pound brisket he made a brine of 3 1/2 quarts water, 1 tablespoon pickling spice, 1 1/3 c kosher salt, 6 tablespoons sugar, 2 cloves garlic and 1 tablespoon pink salt. Pink salt is the only tricky ingredient to find and we ordered our online. He heated the brine until the salts and sugar dissolved, let it cool and then submerged the meat. Now, it'll sit in our fridge until we are ready to cook it Saturday. That day, he will be rinse the brisket and add it to fresh water where it will simmer for about 3 hours with another tablespoon of pickling spice. This is our first time trying it, so I hope it's good.

We'll be starting our St. Pat's dinner with gougeres made with cheese flavored with Irish stout and a tasting of Irish and Irish-style beers. The corned beef will be served with colcannon, a traditional potato and cabbage dish. Finally, we will have an Irish whiskey cake for dessert. I'll share more details later in the week.

Weekly Menu 3/5 - 3/10/12

I'm still one hand typing here as this tendonitis doesn't seem to be getting any better. Luckily, I had something special to console myself with over the weekend, some Fulton War & Peace.
A night in with War & Peace
We really like the way Fulton experiments with infusing other flavors into their beer. This one is their Worthy Adversary Russian Imperial Stout (a great drinker on its own) infused with locally roasted Peace Coffee. Together they make a brew that is not for the weak of heart, but is oh-so-good. Unfortunately, this was a very limited release, we stood in line outside the brewery on release day to get ours, so we'll have to wait until next winter to get more.

We had quite few other interesting infusions from Fulton, Lonely Blonde American Blonde infused with strawberries, Lonely Blonde infused with habaneros, Worthy Adversary infused with raspberries and even Sweet Child of Vine IPA infused with beet greens. It has me thinking about what we should start infusing our homebrews with.

Matt is still on kitchen duty thanks to my wrist.

Pizzeria Lola - No Monday special, but all their regular pizzas are special anyway.

Meatloaf with Baked potatoes - Matt plans on mixing kale into the meatloaf!

Salmon Fajitas - We're going to marinade the salmon in lime and soy so it's a bit of a fusion.

Meatloaf Sandwiches - Based on the Susan at Sun Street Breads with cream cheese on top, though we'll be substituting green tomato jam for the apple butter.

Not sure what Saturday holds, but Sunday we are going to the Lagunitas Beer Dinner at Blackbird.

Weekly Menu 2/27-3/2/12

We are Lego fans in these house and when we saw this minifig in the latest series we had to get it.

I hear there is a lack of people training to be butchers these days, so at least we have the Lego version, hee.

I am in my second week of being in a splint thanks to tendonitis. So, Matt is stuck with most of the kitchen duties. I can help, but things like chopping and such are out for me. I can even only type one-handed. That said we are looking at meals over the week that are a little easier for him to throw together after work.

Matt roasted a chicken on Friday, so a lot of this week will be using that up.

Weekly Menu 2/13-2/18/12

It was a cold, cold weekend here in Minneapolis, like windchills of -13 cold, perfect weather for a big pot of Flemish Stew.

We used this recipe from Serious Eats. It so simple you really don't even need recipe. You just cube some beef, then brown it and some roughly chopped onions. Add a bottle of good Belgium sour beer, the sourer the better in my book (it's important to use the right beer). Thicken with flour and season with fresh parsley and thyme. Let simmer all day until the meat is so tender it falls apart. The recipe said it only took 3 hours, we cooked it for about 5 to get it as tender as we wanted (Next time I'll cook it in the crock pot rather than on the stove). I was also supposed remove the meat to skim off fat and thicken the sauce, but our sauce wasn't fatty and didn't need thickening. Finally, we served it the traditional way, over a bed of french fries. The crisp oven baked fries added a nice texture against the tender meat and soft onions.

Weekly Menu 2/6 - 2/11/12

We finally got to taste our New Years Ale this weekend.

We were a little worried about it carbonating because we had a hard time getting the honey to incorporate before bottling. But as you can see, that wasn't a problem at all. The beer tastes wonderful, a strong Belgium ale with hints of clementines and coriander. Quite crisp. We also bottled our Blackbird Mocha Stout yesterday, now it's a two week wait before we can taste it.

Brewing Beer and Weekly Menu 1/23 - 1/27/12

We are certainly happy to be done with the latest round of construction on our house and back home. Getting new doors and windows in the middle of a Minnesota January cold snap is a lot of fun, but the house is toastier. A good thing with the nasty, icy cold weather we're having. But it is the perfect weather to spend a few hours in the kitchen brewing beer.

Matt got the Brooklyn Brew Shop's Beer Making Book for Christmas. He wanted it because this book is all about brewing beer one gallon at a time.

Until now we've been brewing five gallon batches, which is really a lot of two of us and makes it harder to experiment. The other thing this book has done is introduce us to whole grain brewing (up until now we'd used syrups to create our wort). It's a little bit more work and a little messier, but it's fun messing with flavor. Our first batch was a New Year's Ale straight out of the book that is flavored with Clementines. We are learning a lot, like how useful grain bags and hop socks are!

Matt's simple hop sock holder. Using the hop sock meant there was almost nothing to strain out of the beer before adding it to the fermenter.

Yesterday, I made a batch of Stout using a basic recipe from the book, but added a few additions of my own. First I added coffee beans from our favorite breakfast place, Blackbird and then some Hersey's Special Dark Cocoa.

I'm calling it my Blackbird Mocha Stout. Can't wait to taste it in four weeks. Since we'll only end up with nine or ten bottles we can started dreaming up our next flavor right away.

Weekly Menu 1/2/12 - 1/7/12

Happy New Year everyone! I hope you all rang it in festively.

We spent this year with family, lots of craft beers and a mess o' ribs.

(Sam Adams' Infinium, it's the true "champagne of beers" and ribs cooked the way my dad ib Memphis does them.)

Today we are going to cook up a batch of home brewed New Year's Beer and experiment with making a gallon of beer at a time. Sounds much smarter then the five gallons we have been making.

Weekly Menu 11/21 - 11/26/11

This weekend marked the long awaited opening on the new Fulton Brewery in downtown Minneapolis. Fulton Brewing is one of those micro-brewery success stories you are hearing more and more of these days. Four guys start brewing in their garage with dreams of their own brewery. A few years later, here they are with beer on tap at almost every local bar and restaurant, bottles available in stores and now their own brewing facility with tasting room and growler sales. It couldn't have happened to a nicer group of people either!

A continuous stream of people braved the first snow of the year to celebrate the occasion and pick up their growlers of Sweet Child of Vine, Lonely Blonde and Libertine.

They've turned a 1950's warehouse into a clean modern brewery.

Matt is certainly happy with his growler of Libertine. The mayor of Minneapolis even declared November 18th Fulton Beer Day.

Weekly Menu 11/7 - 11/12/11

I think we might be getting to the end of the construction here at chez Good Appetite, well at least the major indoor stuff, we still have a roof and gutter being replaced and then all the windows and doors in January. Hopefully, that means we'll get the house back to normal and feel like getting in the kitchen to do some experimenting soon.

I'm also preparing to be in my first holiday craft sale ever which means I've been as busy as one of Santa's little elves sewing, crafting and making soap. Seems like dinner time sneaks up on me and I need to whip up a quick meal. Are you all feeling as busy as we are this time of year?

Weekly Menu 10/24 - 10/29/11

Some of you may know I write a craft blog as well as this food blog. Recently, that blog changed names to Just Crafty Enough and I'm writing it with my good friend Susi in San Francisco. I've been doing a few posts over there about throwing an adult Halloween party which, of course, calls for a special cocktail.

Weekly Menu and Farmers Market Finds 9/29 - 10/1/11

I think this is my favorite time of year for the farmers market. We still have the summer vegetables and all the fall vegetables are coming into the market too. I have a hard time restraining myself from buying way more than Matt and I can use in a week everything looks so beautiful.

brussels sprouts on the stalk - Unfortunately, a lot of the sprouts had to be thrown away because of the amount of bugs in them, but I got enough for one meal.
Italian peppers - These got used in chili verde

pie pumpkin - For a crisp recipe

We are harvesting are garden these days too. It really wasn't a great year, but we did get a huge amount of kale.

This is my kitchen sink filled with two grocery bags of kale leaves. Matt had already harvest about half this much earlier in the summer. It all got blanched yesterday and frozen in 4oz packages to use during the winter in stews and soups. I think we have enough put away to be able to use one bag a week all winter.

We also harvested about 3 1/2 pounds of tomatillos which we made into chili verde, a recipe I'll share later this week.

Weekly Menu 8/29 - 9/2/11

No farmers market finds this week. We have such a full fridge from past visits and from our cousin's garden right now that we just didn't need it. Instead we went to the fair yesterday! Tomorrow, I'll share what we ate this year with you.

Weekly Menu and Farmers Market Finds 8/21 - 8/27/11

Boy, did we have a lovely weekend. The weather was perfect and we capped Sunday night off with another Tour de Farm event. This time it was in conjunction with the Celebrity Chef Tour, a series of dinners around the country to benefit the James Beard Foundation. Last night's dinner was at the Star Prairie Trout Farm in Star Prairie, WI. We ate amazing food cooked by Scott Pampuch, Barton Seaver, Tim McKee, Mike Philips and even Andrew Zimmern of the Travel Channel. Plus we got an informative tour of the farm with lots of information on raising trout. According to the Monterey Bay Seafood Watch, farmed trout is a good choice because of its sustainability and little effect on the environment. As usual, I took lots of pictures, so enjoy the show. Weekly Menu and Farmers Market Finds 8/07 - 8/13/11

What a great week at the farmers market. The weather was perfect, there is so much in season and it felt like the whole neighborhood was out enjoying it. We were a little sad to hear Bogart Loves won't be at the Kingfield Market anymore this year. Guess we'll have to run by Fulton for our donut fix on Saturdays instead. If you are in the Twin Cities here's a little heads up, I asked Peter from Peter's Pumpkins if they were going to be selling blossoms soon and he told me this was the time they'd be picking them, so look for them next week or so for at the Kingfield Market.
Farmers Market FInds 8/7
Here's what we picked up...

Sweet Corn - This batch will mostly get frozen to use this winter
Sweet Onions
Italian Sausage - For sausage and peppers
Brisket - It's hard to find a good piece of brisket with a nice fat layer on it for smoking, so Matt grabbed this one when he saw it.
Zucchini
Cucumber - You'd think I'd be tired of cukes eating them everyday for lunch, but no.
Leeks
Eggs
Chicken of the Woods and Chanterelle Mushrooms - I paid a lot for these mushrooms, but it such a treat to get these varieties. Plus I couldn't resist that orange color.

Haven't decided whether to grill a whole chicken or some hamburgers for another night.

Weekly Menu and Farmers Market Finds 7/31- 8/06/11

It continues to be steamy hot in the Twin Cities, not so great for us, but good for all the summer crops. Things are really starting to pick up at the farmers market.

We didn't pick up a ton this week week, but what we did looks amazing.

Cilantro

Green Beans - Steamed crisp tender these are the best summer side
Tomatoes - The first we've seen this season
Cucumbers


According to our corn farmer, Peter's Pumpkins and Carmen's Corn, this is the best sweet corn of the season. Peter told us it was good enough to go home and eat for breakfast raw.

Weekly Menu and Farmers Market Finds 7/24 - 7/30/11

Small trip to the farmers market this week as I am heading up North and Matt will be home alone. With his right arm in a cast still, Matt isn't doing much serious cooking these days.

I did remember to take picture of Bogart Loves luscious donuts this week though.

I think Matt is addicted to that Maple Bacon one. My favorite remains the Brioche and Brown Butter. Just looking at these pictures makes me want one now!

On to Menu Planning Monday...

Tonight - We are out to dinner
Tues - Wed - I'm up North probably eating Walleye and Matt is probably getting a burrito somewhere
Thursday - Sweet Corn and Bacon Pizza
Friday - Saturday - I'm thinking ribs on the smoker one day and perhaps out to eat the other.
