Weekly Menu - 8/24 - 8/29/08

MN sweet corn
The local sweet corn is plentiful & cheap right now (twenty-five cents an ear) so I picked up 10 ears this weekend to put away for winter. I boiled them for 10 minutes, let them cool & then cut off the kernels. I was able to get 6 cups of the sweetest seasonal corn put away for this winters soup, stews & pot pies. Its so good I think I might need to go get some more.

Faux Fried Chicken & Biscuits with Watermelon Salad - Nikki over at Nik Snacks has been making me crave biscuits!

This week's cupcake will be Chocolate Covered Cheery.

Also this week will be the reveal for my first Recipes to Rival Challenge, some cinnamon rolls, another CSA box and who knows what else.

Interesting Kat - I had never thought to do that. What is the downside to freezing? Does the texture get strange or does it preserve pretty well?

Corn of the cob is the best. Good idea to freeze it!

Giff - I think the main thing is to not over cook it before you freeze it, then its less likely to get mushy. This is my first year doing this so we'll see how it turns out.

Why have I never thought to freeze fresh corn? We go through lots of frozen corn in the winter, so this is such a great idea!

That is awesome! I don't know what's up, but I haven't seen ANY good corn this year....:(
It sucks because I used to love fresh sweet corn! Perfect for freezing!

That is such a great idea to blanch the corn and then freeze it! Smart very smart!

I should try freezing corn now, because I've just realized that those canned corn just don't cut it. Thanks for the tip!

Freezing your own blanched corn is such a great idea. The winter corn is totally lousy and the canned stuff is loaded with sodium.

I am so jealous of your corn! Our local farm closed down last year, so no fresh corn (just supermarket). I've never tried cutting the corn off the cob, I'm going to have to try it now.

I do freezer corn as well. It tastes so much better than canned.
