Weekly Menu 8/10 - 8/14

Matt spent some time organizing our canned goods in the basement yesterday.

I have to say I'm feeling pretty good about what we've done so far. We are going to do some bread & butter pickles yet (we picked 14 more cucumbers yesterday), maybe some peach jam & hopefully tomatoes if they ever ripen (I'm afraid they will all ripen while we are on vacation in two weeks).

Wow!! Impressive amount of home canning going on there! I used to do about 30 quarts of tomatoes a year, but in all my various moves finally got rid of my canning stuff since I no longer have a garden. I'm so envious. Especially of the pickles. My sister is the bread and butter pickle queen. If I can find her recipe, I will send it to you. It's amazing. For my birthday she often gives me several jars of her pickles (that's how much I love them!) Nice looking menu, too! You always do such a good job finding ways to create wonderful dishes out of what you already have. I need to do better in that area! :) K

I know the feeling. I think all of my tomatoes will ripen while we are away. Thankfully my husband will be home to enjoy them. They are so sparse this year cause of all the rain.
